Fall Favorite: Roasted Acorn Squash with Butter, Maple Syrup and Cayenne

When it comes to food, autumn is the season when we can all get a little creative. Everybody loves summer and it is all about party and joy, but autumn is in some way a bit warmer in spirit, a bit more colorful, and deeper.

Thanksgiving is just adding up to the atmosphere, with the tasty recipes in the colors of the falling leaves.

Squash is a very beneficial fruit which can add some color and flavor at your table for the dinner at Thanksgiving.

This fleshy fruit is protected by a rind, and it is believed that it originated 7500 years ago in Central America and Mexico. These carb-rich and starchy fruits are filled with countless nutrients and they are very easy to prepare and cook. 

There is a squash fr almost every occasion, and they come in different, tastes, sizes, colors and shapes.

There are also a lot of winter squash types to choose from, like winter squash, summer squash, pumpkin, zucchini, butternut squash, acorn squash and many others.

Sweet Roasted Acorn Squash with Cayenne Pepper & Maple Syrup

Ingredients:

  • 1 tablespoon unsalted butter or ghee (or coconut oil)
  • 2 tablespoons of maple syrup
  • 1 & 1/2 pound acorn squash
  • Cinnamon to taste
  • Cayenne pepper to taste
  • Salt to taste

Instructions:

Preheat the oven to 400F degrees. Then wash the squash and dry it, then cut it lengthwise in half.

Get the seeds out and pulp from both halves with a spoon.

Spread some coconut oil on both halves, use a spoon or a baking brush, glaze it with maple syrup, and sprinkle some salt, cinnamon and cayenne pepper. 

Put both of the halves on a lined baking sheet, and bake them for one hour, or until the squash becomes tender when you pierce it with a fork.

You can use butternut squash instead of acorn squash, and instead of baking it 1 hour, you can bake it for 45 minutes.

Ingredients:

  • 1 tablespoon of olive oil
  • 1 & 1/2 pound acorn squash
  • Rosemary to taste
  • Fresh Thyme to taste
  • Garlic Powder to taste 
  • Salt to taste

Instructions:

Wash the squash and cut it lengthwise in half. Scrape out the pulp and the seeds, then brush the halves with olive oil and add all the spices. Bake both halves on a baking sheet for about an hour on 400F degrees.
